Lemon Basil Chicken
4 servings
Ingredients:
2 Chicken Breasts
1 can Cream of Chicken soup
1/4 C. Water
1/2 C. Lemon juice
1t. Basil
salt and pepper to taste
Directions:
Put all ingredients in the crock pot. Cook on low 6-8 hours, or high 3-4. If the sauce seems to thin just add about 1T. corn starch. I shredded my chicken. If you want to leave the breasts whole you could, but you might need to add more.
Serving Suggestions:
Cous cous, rice & Asparagus, broccoli, Salad

Sloppy Chicken
Into the crockpot, toss:
2 chicken breasts (I threw mine in frozen 'cause I hadn't planned ahead)
1 can cream of chicken soup
1 can chicken broth
1 sleeve Ritz crackers, crushed
1 can cream of mushroom soup
Cook on low for 5-6 hours, stirring once in a while (I think I remembered once, maybe twice). We pulled the chicken into lots of pieces (basically shredded it) and served all of it over rice.
I had low expectations for the Ritz -- I thought they would turn into gross mush. But they dissolved entirely into the mixture -- you wouldn't even know they were there. Yet I swear they did something for the overall texture and taste. Delicious.

Drip Beef Sandwiches
1 chuck / pot roast (4-5 ish lbs.)
1 can beef consume (or beef broth)*
1/2 Jar of Pepperoncinis, including juice
4 t. Italian Seasoning Dressing
Throw it all together in the oven at 275 degrees for 5-6 hours. Or cook everything in a crock pot for 5-6 hours on low. Shred meat and remove Pepperoncinis (unless you want to eat them). Serve on rolls/hoagies with melted swiss cheese.
* I never add the beef broth, since cooking my roast in the crock pot always seems to produce enough liquid.

Slow Cooker BBQ Chicken Sandwiches
4 large boneless, skinless chicken breasts
1 cup ketchup
2 T mustard
2 t lemon juice
1/4 t garlic powder
1/2 cup maple syrup
2 T Worcestershire sauce
1/2 t chili powder
1/8 t cayenne pepper
Place chicken breasts into the bottom of a slow cooker. In seperate bowl, stir together remaining ingredients (*I always forget to do this-- I just throw everything into the crock pot*) Pour the sauce over the chicken, set cooker to low and cook for 6 hours. Shred the chicken with 2 forks and cook for 30 more minutes. Serve on hamburger buns.

Delicious Sunday Roast!
2 lbs beef roast (mine was 3.4 lbs and worked just fine)
2 cans cream of mushroom soup
1pkg dry onion soup
2 cups beef broth (I used 2 bouillon powder packets dissolved into 3/4 cup hot water each)
1 1/2 tbls Worcestershire sauce
Garlic powder to taste
Any other seasonings to taste ( I use Montreal steak spice)
1 Bay leaf
2 tbls Chopped fresh parsley
Spray crock pot with cooking spray.
I put Montreal steak spice on bottom of crock pot before I put in the roast. Sprinkle Montreal steak spice on top of roast also. (or whatever seasonings you like).
Mix remaining ingredients except for parsley and bay leaf. Pour over top of roast; sprinkle parsley over top and throw bay leaf in.
Cook on low for 8 to 10 hours. Makes its own gravy!!!!!!!
We made garlic mashed potatoes to go with this roast.
Garlic Mashed Potatoes (recipe courtesy of Paula Dean)
3 med. potatoes chopped
4 tbls butter
1/4 cup sour cream( I didn't have enough sour cream, so I used cream cheese instead)
1 tsp finely minced garlic(again, I didn't have, so I just sprinkled some garlic powder)
1 tbls whole milk
Salt and Pepper
This recipe serves 2 to 3 servings. I had to more than double for my Sunday dinner, so just do what is best for your family.
Cook Potatoes; Mash with ingredients. Add more milk to get desired consistency.

White Chili
White Chili
3-4 15 oz. cans of white chili beans
2-3 cups uncooked cubes of chicken
1 t. cumin powder
1 t. chili powder
1 t. garlic salt
1 cup white onion, cut up
2 T. butter
6 cup chicken soup stock, or prepared bouillon
1 c. salsa
Sauté onions and chicken in butter, add to rest of ingredients. Cook until hot.
*I made mine in the crock pot and it worked great. I had uncooked white chili beans (not canned), so I let them cook in the crock pot for a while before adding the rest of the ingredients. I didn’t measure exactly some of the ingredients; just go by taste. It was super yummy and made for good leftovers*

Easy Cheesy Crock Pot Chicken
Garlic Powder
Salt and Pepper
1-2 cans Cream of Mushroom Soup
1-2 cans Cream of Chicken Soup
1-2 cans Condensed Cheese Soup
1-2 cups Sour Cream (opt.)
Shredded Cheese (opt.)
Place chicken breasts in crock pot and sprinkle with garlic powder, salt and pepper. Add the soups, covering the chicken. (The original recipe calls for one can of each soup, but I like to have it more saucy to serve with things, so I double the soups.) Cover and cook on low for 6-8 hours, or on high for 3-5 hours. Stir in optional sour cream and shredded cheese when it's finished.
We've eaten this as whole pieces of chicken with cheesy sauce, but I usually shred it with a fork and then we have it over rice, noodles, or potatoes. Enjoy!

Caramel Apples in Crock Pot
Ingredients:
2 packages (14oz each) caramels
1/4 cup water
8 medium apples, such as McIntosh, Gala, or Fuji
sticks for apples
Preparation:In slow cooker, combine caramels and water. Cover and cook on high for 1 to 1 1/2 hours, or until caramels are melted, stirring frequently.
Meanwhile, line a baking pan with wax paper; butter the paper.
Wash and dry the apples. Insert a stick into stem end of each apple. Reduce crockpot heat to LOW.
Note: If the caramel does happen to scorch, put it through a mesh strainer and discard any dark particles. Put the sauce into a saucepan or back into the cleaned slow cooker and keep warm while you dip the apples.
Dip apple into hot caramel; turn to coat entire surface. Holding apple above pot, scrape off excess accumulation of caramel from bottom apple.Place coated apples on prepared wax paper in pan. As you near the bottom of the pot, use a spoon to spoon hot caramel over apples. Put the pan of coated apples in the refrigerator to set thoroughly. Use caution if children are helping; the crockpot will probably be quite hot to the touch and the caramel could scald

Impressive Sunday Chicken
BBQ Chicken Crock Pot
1 Jar of Barbecue Sauce
1 pound Chicken
Buns or Rice
Directions
Pour a little Sauce in the bottom of the pot.
Add the chicken
Pour the rest of the sauce on top.
Make the rice as on the box or in rice cooker.
After its done, I usually shred the chicken and put over the rice or on the buns. I also put green beans or corn as a side.
8-10 hours low
4 hours high

Crockpot Chicken Soft Tacos
In the morning, throw a few chicken breasts into the crockpot. Top with salsa -- a fancy kind, or just whatever is in your fridge. Cook on low for about 8 hours.
I don't like salsa, so I pour it into a separate bowl for my husband. Then I shred the chicken and throw it in a tortilla shell with sour cream, shredded lettuce and grated cheese. You, of course, can add whatever toppings you like. My husband drenches his in the salsa.
We made two large chicken breasts yesterday; we've made six large tacos from it and still have only used about half the chicken. It makes amazing leftovers -- I don't even bother to heat it up.

No time? Try this!

Cook time is 8-10 hours on low.
Peel and cut potatoes into chunks. (This takes the most time out of all of it.) Three medium sized potatoes works for two people.
I use peeled baby carrots. You just dump it in there right from the bag. Put in however many you want. I put in a lot.
Use one can of chicken broth.
Add one can of condensed Cream of Chicken Soup. (If you're doing this for a lot of people you can add two cans of Chicken Broth and two cans of Soup.)
For two add two frozen boneless skinless chicken breasts. Add more chicken for more people. Put the chicken in first, then the vegetables, and last the broth and soup.When I walk in the door this is roasted to perfection. The chicken falls apart and is moist. When you serve it, you'll want to put a bit of the juice with it. We usually have enough left over for Deven to take for lunch the next day. Let me know how yours turns out!
